Instructions
Preheat the oven to 350* Mix the butter, sugars, eggs, and peanut butter in a large bowl – I have done it both by hand and with a hand mixer, either is fine.
Mix the flour, salt, baking soda and oats in a separate bowl. Combine the ingredients from both bowls and mix well until you have a nice dough.
Using a jelly-roll pan (a cookie sheet with a lip), pat the dough out evenly over the pan. I use my hands or the back of a spatula. (There is no need to grease the pan – the peanut butter makes it easy to cut out of the pan). Place in pre-heated oven and allow to bake 15-17 minutes or until golden brown. Check at 15 minutes as each oven cooks differently.
Remove from oven and immediately sprinkle the chocolate chips over the top of the peanut butter bars. Allow the chocolate chips to melt for about 10 minutes. Using a spatula, spread the melted chocolate chips (frosting) evenly over the bars. Allow to cool for 30 minutes before cutting.
We actually love these slightly frozen as well. You can freeze them and take them out when you have company or need a little treat and they taste delicious! Enjoy!
