I love to get together with friends and family. With my husbands hearing loss he rarely likes to entertain because more people=more noise. Groups are hard for him because he has a hard time keeping up with conversations and will feel lost. We have a family in our neighborhood who I happen to be pretty good friends with the wife, and he with the husband, so when he told me he wanted to have them over for dinner I jumped on that! I knew that I wanted to have burgers but wanted to spice things up a bit. We love avocado bacon burgers when we go out to eat so I wanted to try and incorporate that somehow. I found THIS RECIPE for Chipotle Mayonnaise and I knew that this would give me what I was looking for. I added a couple spices to the mix and I have to tell you they were amazing! So good in fact we had them twice this week!
I usually like to try a recipe before I serve it to others so I was pretty nervous. I prepared the mayo earlier that morning. It seriously took 5 minutes and I felt like it had a good smoky/spicy taste that would add to all the other flavors of our burger. It was a hit! I heard “this is so good” from all around the table!
I timed myself the second time I made it, and I got it all done in 35 minutes! I cheated a bit because I use store bought fries from Wally’s, they are seasoned and absolutely delicious! They are only $2.00 and are done in 25 minutes. I usually bake them at the 425* recommended for about 22 minutes, then I broil them for about 3 minutes to give them a bit of a crunch. I also used pre-made burger patties, I throw them on the grill and do it low and slow. While both of those are cooking I wash and cut up all the burger fixens!
I also cheated because I cooked the bacon in the micro! Throw some paper towels on a paper plate and lay the bacon strips so they are close but not over lapping. I cooked it for 2 minutes, then rotated the bacon that was in the middle to the outside, cook for 1 minute, repeat until it is done to your liking. It turned out pretty good!
I also made some Agua Fresca with watermelon! It turned out so good and I figured out how to eliminate all the foam that I usually have when I make agua fresca.

I made the mayo and put it in a mason jar. It was great on the burger, and pretty darn good to dip your fries in, an all around winner!
For a delicious meal done in 35 minutes, I would say this is a keeper! I don’t mind at all that it was not from scratch!

- 6 frozen hamburger patties
- 6 hamburger buns a good quality bun makes all the difference!
- 1 bag Great Value seasoned fries bake for 22 minutes, then turn on broil for 3 minutes
- 1 16 oz pkg bacon cook in microwave
- 1 avocado sliced
- 2 tomatos sliced
- 1/2 red onion sliced
- 1 romain lettuce washed and cut
- 2 pickles sliced
- 1 cup mayonaise
- 2 chipotles in adobo sauce
- 1 TBS chipotle sauce from can
- 1/2 juice of lime
- 1/4 tsp garlic salt
- 1/4 tsp cumin
- 1/4 tsp black pepper
- Put the mayo in your blender along with the two whole chipotles, the adobo sauce and spices. Blend well. Ready to serve on burgers or use as dipping sauce for fries.
I am a vegetarian so that burger looks sooo good —without the meat on it 🙂
I am sure it would still be delicious with some veggie burgers on there too : )

It looks amazing! I usually add avocado in my sandwiches as well, especially since it makes you feel more full without it being unhealthy. The chipotle mayo sounds so good too, I’m sure it adds a lovely flavor to the burgers!
Avocado makes things taste so good, and you are right adds in that healthy fat to leave you full longer!

Thanks Terri! It really is a delicious burger, and the chipotle mayo is so amazing! I can’t believe I didn’t say how to get rid of the foam in the agua fresca- I am not a fan of the foam like others in my family, but I just poured it through a strainer and it was foam free and so delicious!

This bacon burger looks so good. I love trying out new and juicy recipes for hamburgers and this one seems to have all the right flavors.
I don’t know which I want to try first, the chipotle mayo or the watermelon water. Both look so good and a perfect compliment to a burger.
