Growing up we ate tuna over rice quite a bit. It was easy and a cheap meal to feed 9 people. There are a few meals that we ate a lot, (this being one of them) that I came to dislike it very much. Canned cream soup is REALLY not very good for you, and needless to say I never made tuna over rice as an adult. A few years ago we were visiting my sister-in-law (my husband only has one sibling) and her family, and while we were there my sister in law made us tuna over rice. I honestly was a bit worried because of my previous relationship with tuna over rice, but after the first bite I was hooked! This is such a yummy and lite meal, especially with it being so hot lately, it is one that I love to make AND eat 🙂
It is really quite simple and you can add any vegetables that suit your fancy. I make my Cilantro Rice, mix the tuna with a bit of mayo, top the rice with the tuna and veggies and there you have it! A super easy and healthier version of tuna over rice!
- 1 can tuna in water
- 1/4 cup mayonaise
- 1 roma tomato diced
- 1/2 red pepper diced
- 1 cup frosen corn thawed
- 1 cup frozen peas thawed
- 1/2 cucumber diced
- 1 can black beans rinsed
- 4 sticks celery diced
- 1/4 cup red onion diced
- Prep the Cilantro Rice as directed. As it is boiling, drain the tuna and mix with mayo. Dice any veggies you like. Top the rice with tuna and veggies and mix. Enjoy!
