About a hundred years ago my mom and sisters threw me the cutest bridal shower. It was “romantic movie” themed and so much fun! Each person invited was “assigned” a different movie old and new alike – Pillow Talk, Far and Away, Forever Young, Sleepless in Seattle, even Shrek! Each person got super creative with their gifts, many of them watched the movie they were assigned and gave some really fun gifts! I honestly still remember who gave me many of the gifts and think of them when I use said item. Its kinda scary though because I can remember all these things from years ago, but I cannot remember something I read yesterday! I digress, anyway the whole reason I brought up my bridal shower was because my sister made some yummy white chocolate popcorn. It was a hit – especially for my husbands grandmother who happened to be visiting from Ecuador. We have continued to make this yummy treat and I have changed it up many times. One of our favorites includes salted almonds and plain M&M’s.
It is the perfect combination of sweet and salty, it is always a big hit when we make it for family get togethers, not to mention it takes a whopping 10 minutes, an all around winner!
You can use any kind of nut, but we love almonds around our house. Just make sure you get something that is salted. I also prefer guittard white chocolate chips or the vanilla flavor shown here.
You have to be patient when melting the chocolate chips. I have ruined a few batches because I tried to do it too quickly in the microwave and the chocolate becomes crumbly and gross. I do mine in 20 second intervals and give them a good stir with a spatula. I did 20 seconds at my mother in laws and ruined it – I guess some micros cook a bit higher than others, so take it slow. I do mine about 5 / 20 second intervals or until its smooth.
Coarsly chop your nuts and have the M&M’s ready. I start drizzling the chocolate on the popcorn, sprinkle some nuts and M&M’s and stir. I repeat the process until everything is nice and mixed.
You can enjoy it right then and there but you will get to do some finger licking after – which almost always takes me back to being a kid.
If I am not in the mood for finger licking, I usually throw it in the refrigerator for about 10 minutes and then it is good to go.
I made this for the 4th of July, but you can change it up to anything you would like depending on what kind of M&M’s you purchase. So go ahead and give this popcorn a try, it does not disappoint.
See the Happy!
