Yogurt Cake

This time of year when we celebrate spring birthdays, Easter, or Mother’s Day I always crave a light cake such as this yogurt cake.  A friend of mine introduced it to me when I was on Weight Watchers many years ago… wow, like 10 years ago. My, how time flies.  Time to start Weight Watchers again, haha.  I don’t know the WW points for it as I’ve heard their plan has changed 2 or 3 times since then.  It’s made with applesacue rather than oil, and egg white rather than the whole egg.  So it’s considerably less fat than a normal cake.  ENJOY!!

Instructions
  1. 1.Preheat oven to 350 degrees. Grease a 13x9 pan, set aside. 2. Mix cake mix, egg whites, 1-6oz yogurt, water and applesauce (or alternate ingredients). 3.Pour batter into the greased 13x9 pan. Bake for 20-30 min. 4. Once the cake has cooled, mix cool whip and yogurt and spread over the top of the cake. 5. Keep refrigerated till ready to serve.

    Hi Meg,

    I made this cake yesterday. I got a bit distracted during the preparation. After I put it in th3 pan I realized I hadn’t put in the water. I baked it anyways (for about 40 minutes or so), and it was delicious!!! I used the key lime yogurt. Thanks so much for posting!

      WOW Lori!! Good to know that it works even without the water. I’ve never tried the key lime, I’ll have to try it next time. I’m glad you liked the recipe, it’s definitely one of my favorites.

    I’ve made this cake for 10 yrs or more. I’ve taken it to all kinds of gatherings and always get asked for the recipe!! It’s always a hit!! My favorite us cherry with an addition of almond extract in the batter. I don’t try too many others because of my love for cherry but key lime sounds scrumptious!!

    I made this cake again (used lemon yogurt…but I prefer the key lime), and threw in some fresh cherries from our -abundant – tree)…….delish!
