Chocolate Almond Balls

cookies2This super easy no-bake cookie recipe has become a family favorite over the past decade. The hint of almond is delicious and chocolate – need I say more? We have made these cookies for various family events over the years: birthdays, baby showers and most definitely Christmas!  I even made them for my book club last week and everyone LOVED them! These little cookies are unique and will definitely add some pizzazz to your table!sprinkles

The best part though – they are surprisingly easy to make and don’t take much time at all, just another reason they are a favorite. This is definitely a “triple threat” cookie! Fast, easy, and delicious – not to mention beautiful!! (I guess that’s four, not three ;)). Instructions
  1. Crush chocolate graham crackers using a food processor. If one is not available put them in a large zip-lock bag and crush using a rolling pin.
  2. In a large bowl combine graham crackers crumbs, powdered sugar, almonds, butter, almond flavoring and water until well mixed.
  3. Shape into one inch balls; dip or roll the top half in the sugar sprinkles.
  4. Place on a cookie sheet that is lined with wax or parchment paper. Cover and refrigerate for 1 hour. Store refrigerated, in a covered container.
  5. These are just the right size to put in a small decorative liner similar to those used to make homemade peanut butter cups or chocolates. They can be found on the candy making or baking aisle in most craft stores.
