Easter Baby Chick Cupcakes

I love Springtime! The daffodils and tulips are blooming. The grass begins to green up and we (usually) have a break from the falling snow for a time. I love the way Spring breathes new life into everything around me. I cannot think about Springtime without thinking of Β Easter. Celebrating the life, death, and resurrection of the Savior is such a beautiful thing. Through Him we can live both spiritually and physically again.

I have always enjoyed Easter and all the delicious eats that come with it. We have traditional foods we eat each year, and these fun Lemon Coconut Chick Cupcakes are one of them! We started making them when my daughter was about 3 and she requests them each year. I saw the idea in the Family Fun magazine, but I could not find where it was because it was so long ago. Β Not only are they super cute and fun, the lemon and coconut is such a refreshing combination to have!

AND they are super easy! My littles love being involved, although Mama has to have more patience that way!

Super simple ingredients and you can make these in no time!

You will need:

1 lemon cake mix (eggs, oil, and water, my most favorite is Betty Crocker)

1 lemon frosting

1 1/2 cups coconut

1/2 cup chocolate chips

1 pkg orange slices candy

yellow food coloring

Prepare the cake mix as directed. It’s always nice to have a little helper for this part πŸ™‚

I like to use a cookie scooper to fill the cupcake liners – so much easier than a spoon! I have to stand back and let my little guy help, even though I could make so much less mess!

I like to do one regular sized cupcake pan (12 cupcakes) , and some of the mini cupcakes (8 cupcakes) so we have some large and baby chick cupcakes πŸ™‚

While they are baking you can prep the beaks and the feathers.

With kitchen shears I cut the orange slices in fourths. I like to cut one of those fourths in half for the baby chick beaks πŸ˜‰

Put the coconut in a large bowl and slowly add the yellow food coloring and stir the coconut until its mixed. I did 4 drops and stirred 4 times total.

After baking them as directed and allowing them to cool, go ahead and frost them with your lemon frosting.

I hold the cupcake over the bowl with the coconut in it and using a spoon, soon it over the top. Turing the spoon over to the back I gently push the coconut on the frosting to help it stay. Repeat until you have the desired amount of ‘feathers’.

Add two chocolate chips for eyes ( the bottom of the chocolate chip facing out), and the orange slice as the beak. Super simple and super cute!

There you have it! A fun Easter treat you can make with the littles, and it can be done in just about 30 minutes!

Ingredients

Instructions
  1. Prepare the cupcakes as directed on the box . While they are baking, prepare the coconut and the orange candy slices. In a large bowl add about 4 drops of food coloring at a time and stir in the coloring, repeating until you get the desired yellow. I used 16 drops and stirred quite a bit. Using kitchen shears, slice the orange slices in fourths for the beaks.
  2. Once the cupcakes have cooled, frost them. Immediately put the coconut on. I hold the cupcake over the bowl with the coconut in it and using a spoon, spoon it over the top. Turing the spoon over to the back I gently push the coconut on the frosting to help it stay. Repeat until you have the desired amount of 'feathers'.

      Thanks so much Vanessa! I love being able to involve the whole family! More often than I would like to admit I want things to turn out “just so” and I am not super great about letting my littles participate. These are so much fun to make and to eat!
